Variation Ideas:

  • Vegetable Oil – I used vegetable oil in this recipe but any oil with a high smoke point will work great. Avocado oil, coconut oil or canola oil would work great in this recipe. We recommend not using olive oil since it doesn’t have a high smoke point.
  • Change the Cheese – You can easily use your favorite type of shredded cheeses in this quesadilla recipe. Use your favorite. We loved using pepper jack cheese.
  • Change the Seasoning – Garlic salt, onion powder or use what you have.
  • Add in vegetables – Cook the vegetables right on the griddle until tender and chicken is thoroughly. Then add them to your quesadilla. We love spinach, onion, peppers.
  • Place in the Oven – If you prefer or don’t have a blackstone, you can make these on the stove top or in the toaster oven.
  • Dipping Sauces – Add your favorite dipping sauces. We like salsa, sour cream, and guacamole.

Can I use already cooked Chicken?

Yes, you can use already cooked chicken. This is the perfect meal to use leftover cooked chicken. Even if you don’t use all the chicken when making this recipe, use it the next night to make even more Blackstone Chicken Quesadillas.

Just skip the steps in the recipe to cook the chicken and place your tortilla on the flat top griddle. Heat the tortilla and top with cheese and chicken to make a quick lunch or dinner.

How to Store:

These are best served fresh but you can refrigerate the leftovers in an airtight container for up to 5 days. When I make this recipe, I usually make enough quesadilla’s for what we will eat for that night.

Then with the leftover chicken, I use it for another meal or make another batch of quesadillas.

FAQs

What is the best griddle temperature for quesadillas? ›

While assembling the quesadillas, preheat an electric griddle to 350 F (or grill to medium-high heat). I use a griddle (rather than a grill) to cook quesadillas, as it is easier to turn them without losing their insides.

What is the best cheese for quesadillas? ›

Cheddar and Monterey Jack are standards of American-style quesadillas. But if you are planning ahead, consider that freshly grated cheese such as cheddar or Monterey Jack makes the meltiest quesadillas.

Should I use butter or oil for quesadillas? ›

The oil promotes even browning and makes the tortilla nice and crispy. You could use butter but it has a tendency to burn. If you want the flavor of butter on your quesadillas melt a tablespoon in the microwave, stir in a little cooking oil and brush it on your tortillas.

Why are my quesadillas soggy? ›

Too much fat will make your quesadilla soggy instead of crispy. Use just enough to coat the bottom of your skillet — about 1/2 teaspoon of butter or oil. Warm it in the skillet over medium to medium-high heat. Add the tortilla and top with cheese.

Are quesadillas better with corn or flour tortillas? ›

Corn tortillas go well with Mexican dishes like tacos, enchiladas, and tamales. They are also perfect for use in tostadas, sopes, and quesadillas. Flour tortillas are often used in burritos, fajitas, and chimichangas. They are also great for making quesadillas, sweet dishes like dessert tacos, and breakfast burritos.

How do you make quesadillas not fall apart? ›

Spread ¼ cup (25 grams) of cheese over the tortilla.

You will be adding the rest of the cheese later; the two layers of cheese will help "glue" the quesadilla together. You can use Cheddar cheese, or any other type of shredded cheese.

Why did my chicken stick on my Blackstone griddle? ›

The primary reason for a griddle to get sticky is because it has too thick of a layer of oil on the cooking surface. A properly seasoned griddle has a very thin layer of oil applied that burns into the surface to create a permanent, hard, non-stick surface.

Why do you use water on a Blackstone griddle? ›

Pour clean, hot water onto your griddle to help rinse away food residue.
